A Colleyville couple is expanding their specialty meat market business across Northeast Tarrant County, with a second New York Butcher Shoppe set to open in early September at Southlake Marketplace.

Ruth and Bryson Nokes, who opened the franchise's first Texas location on Glade Road in Colleyville in August 2024, will operate the new store at 2001 W. Southlake Blvd., Suite 149, near Delucca restaurant, the Fort Worth Star-Telegram reported Monday, July 14.

The 1,500-square-foot space is undergoing a $200,000 interior finish-out, according to a Texas Department of Licensing and Regulation filing.

That renovation, designed by Clark Design Co. of Arlington, started April 20 and was listed for completion by July 24, with the store's public opening following roughly five weeks later.

"We're consumers of good quality foods, and we recognize that there's a lack of this in the area," Bryson Nokes told the Star-Telegram. "For as big as our Metroplex is that shouldn't be the case."

The Nokes, who came from corporate backgrounds rather than the food industry, said they spotted a gap in the market for a full-service butcher offering gourmet cuts alongside prepared meals, beer, wine, and specialty grocery items under one roof.

The Southlake store will initially mirror the Colleyville location's lineup: Certified Angus Beef (prime ribeye, New York strip, tenderloin, Australian wagyu), Heritage breed pork, fresh seafood, house-made sausages, and natural pasture-raised chicken.

All beef is wet-aged a minimum of 21 days and sourced from Texas and Canadian family farms. A dry-aged ribeye option will also be available.

Prepared sides, salads, and entrées are made daily.

New York Butcher Shoppe was founded in 1999 in Mount Pleasant, South Carolina, by the D'Elia family after they relocated from Brooklyn. The franchise now operates 41 locations in 10 states, according to its website.

The Nokes' Colleyville shop at 3855 Glade Road was the brand's first in Texas; a separate franchisee runs a Houston location.

The Southlake store's target opening is around September 1. No grand opening event has been announced. Shoppers can visit the Colleyville location at 3855 Glade Road or check nybutcher.com for updates.
