Hudson House won't hit its summer target for Southlake's Park Village after all.
The seafood-and-cocktail restaurant's 11th DFW location, at 1131 E. Southlake Blvd., is now targeting a late September or early October opening, Southlake Style reported in July.
The Fort Worth Star-Telegram reported July 28 that the date had slipped to "at least early fall."
Neither outlet cited a reason for the delay.
Construction is underway inside the 5,000-square-foot space that formerly housed RA Sushi, which closed in May 2025 after roughly a decade at Park Village.
Southlake Mayor Shawn McCaskill said the old restaurant was completely gutted to prepare the space, according to the Star-Telegram.
The new location sits across from Gloria's Latin Cuisine in the shopping center on East Southlake Boulevard.
Hudson House is owned by Dallas-based Vandelay Companies, led by founder and CEO Hunter Pond.
The company also operates Drake's Hollywood, El Molino and Anchor Sushi Bar across the metroplex. The Southlake restaurant will be the chain's 11th DFW outpost. Its Fort Worth location, which opened in 2023 off Camp Bowie Boulevard, has been "a big hit," the Star-Telegram reported.
The chain's menu, as described by the Star-Telegram, leans heavily on seafood: raw oysters and sushi, New England-style lobster rolls on brioche bread, and fish tacos made with blackened redfish.
The lineup also includes pan-seared redfish, steak frites, cheeseburgers, Chicken Parm, and key lime and chocolate silk pies. Hudson House brands one of its cocktails as the "World's Coldest Martini."
Fifth Corner, the retail real estate company that purchased Park Village in 2024, told the Star-Telegram that Hudson House fits the company's plans for the shopping center. F
ifth Corner said the restaurant adds to what the company described as continued momentum at the property.
No firm opening date has been announced. Based on the late-September-to-early-October window reported by Southlake Style, Southlake diners could be placing oyster orders before Halloween.
