A fusion taco drive-thru is coming to Colleyville, filling a vacant storefront on Colleyville Boulevard with beef bulgogi, brisket and firecracker shrimp.

Tick Tock Taco plans to open in late November at 4605 Colleyville Blvd., the former Shipley Do-Nuts site, the Fort Worth Star-Telegram reported Wednesday, Sept. 9. It will be the brand's first location in Tarrant County.

Co-owners Anum Khan and Moe Arsalan, a North Texas couple, are building the restaurant around a drive-thru model with a small lobby and patio. Construction is underway.

Arsalan told the Star-Telegram the concept fills a gap he sees in the market. "I have not seen a taco concept, a crafty taco concept, that's in a drive-thru model that serves fresh organic meat and proteins," he said.

The couple launched their first restaurant, Churros On Top, in Fairview about three years ago with no prior culinary experience. '

They later added Tick Tock Taco inside that Fairview location before developing it as a standalone brand. Community Impact reported in July that the Colleyville spot will be the brand's second location.

Khan described the menu as "globally inspired" fusion tacos in the July Community Impact article. The Colleyville location will feature eight to 10 options spanning chicken fajita, honey chipotle chicken, brisket, beef bulgogi, carne asada, hot teriyaki chicken and firecracker shrimp, according to the two outlets' reporting. Vegetarian options will also be available.

All tacos use Halal and organic ingredients, according to Community Impact reporting.

Arsalan said the final menu may land closer to eight items. He wants to keep things simple so the kitchen can maintain quality at drive-thru speed.

Churro and ice cream desserts round out the menu, supplied by the couple's Churros On Top brand.

No specific opening date within November has been announced. The restaurant sits at 4605 Colleyville Blvd., near the intersection with Hall Johnson Road.
